Adam Matthews was founded in 1983 by Adam Matthew Burckle. Growing up in Louisville, Kentucky on special occasions Adam would look forward to and enjoy the hard work of his Mother Nell when she would bake her famous New York style cheesecake. While attending culinary school, Adam missed the flavor and richness of her cakes, so he started baking them at school.
The alcohol in the rum bakes out, though the molasses, flavor from the barrel aged rum stays in to compliment our cake and create a unique satisfying flavor that you will long for time and time again. Over 200 years of Kentucky heritage is in every Kentucky Woods Bourbon Caramel Cheesecake. Our secret recipe retains the pure essence of the aged Kentucky Bourbon.
