Happy Hollow Farm is nestled among the rolling hills along the Missouri River. The primary growing fields border the Little Splice Creek bottom and thus benefit from the beautiful silt loam soils that are rich in organic matter. We are a USDA certified organic farm and use a combination of highly managed cover cropping techniques, crop rotations, compost applications, hay mulch and add small quantities of minerals and nutrients.
My goal is to give back more to the soil than I take. Happy Hollow Farm welcomes all who are interested in supporting local sustainable agriculture to become a CSA member. Each member receives a box of seasonal produce every week during the 32 week growing season (Early May thru the end of December).

Community-supported agriculture farms began in the early 1960s in Germany, Switzerland, and Japan as a response to concerns about food safety and the urbanization of agricultural land. Groups of consumers and farmers in Europe formed cooperative partnerships to fund farming and pay the true costs of ecologically sound and socially equitable agriculture.
As an Extended Season CSA member you will receive delicious certified organic veggies, fruit & eggs from early May thru the end of December/beginning of January. That's nearly 3/4 of the year! Full & Single CSA share sizes are available for the Extended Season. CSA members who join for the entire season receive a discounted share price compared to joining for the separate Summer & Winter seasons.
A zestier take on a lettuce mix. These greens are a delicious mix of baby mustards tender enough to treat like your favorite salad blend. Sold in.25 or.4lb. Popular in Italian cuisine, chicories are a bitter green that are delicious raw or cooked! Be sure to pick the type you'd like, we have two different types of ravishing radicchio and a sweet Italian escarole.
Enjoy the beauty of a seasonally grown and individually arranged flower bouquet each week. CSA Flower Shares can be picked up at the Columbia Farmers Market on Saturday mornings OR at the mid week CSA share drop site OR delivered to your home or place of work. Locally grown flowers last longer and the amazing diversity of things that we grow will brighten up your home or office each week.
In the same skillet, cook the onions and peppers (add additional olive oil if necessary) for about 10 mins., until tender but not browned. Stir in the garlic & season with salt & pepper to taste. Place a third of the tomato mixture in the bottom of a 2 & 1/2 quart casserole (about 2.5 deep). Cover the casserole and simmer over low heat for 10 mins.
