Chef Freddie has learned all his talents in the culinary field, when he started working as a Chef in 2001 at the St. Regis Monarch Beach in Dana Point, CA. Working with different chefs from around the world like Master Chef Azmin Gramham, Chef Castan from France and Chef Ross Turnbull from Canada. Chef Ross Turnbull is whom I thank today for bringing me here to the Island of Kauai in 2007, as Chef de Cuisine at the Princeville Hotel.

Services
Three scrambled eggs, ham, pico de gallo and cheese melted together inside a flour tortilla. Spinach Tortilla, mixed grilled peppers, mushrooms, zucchini, onions, rice, beans, lettuce and pico de gallo. Two corn tortillas filled with asparagus, spinach and tofu, topped with red sauce, lettuce and guacamole.

Fish tacos were very small, expensive and didn't have much fish or anything else in them. Disappointed as I made a special stop to try these. Also had to pay an extra $1.50 per taco for fish tacos. So for a $17 dish for 2 tacos, I left disappointed and still hungry. Also, the person taking the order didn't really speak or understand very well. She also couldn't really answer any questions. My husband who went across the street to get Hawaiian bbq paid less than I did for his meal and got twice as much food.

This place is a great value and the food is great. We got the nachos with beef. So flavorful with fresh chips and a heaping mound of toppings and melted cheese. I also got the grilled fish taco and immediately wished I had ordered two because it was so good. My daughter got the carnitas burrito and loved it. It was a huge burrito. All of this food for just $35 including tip was mind-blowing. Now while it's not better than Mexican food in Houston, it's great island fare especially after a long day at the beach (we had just finished surfing lessons and were starving). We ate at 3 and didn

We both had the fish tacos, and they were some of the best we had in Hawaii - and we had quite a few while we were travelling! Friendly staff and reasonably quick service.
The weather was overcast and threatening, so all of the restaurants in town had waiting lists the day we were there. There was no line at Federico's the first time we passed, and a very deep line once we got in line. They did an excellent job of keeping the orders flowing.
Highly recommended!

Really good Mexican food with an island twist. Al Pastor taco and Carne Asada nachos were delicious but the fried soft shell crab tacos were an experience! The fried crab on it's own is delicious but adding on the avacado, pineapple coleslaw, and chipotle guac sauce puts this as one of the best tacos I've ever had! Delicious food!

Terrible customer service and overpriced mediocre foods at best The young skinny girl with long dark hair at the cashier got my diet coke order with no ice wrong and when asked if we could get a refill correctly, she was very abrasive and very rude, told us that she would only do so if we get back to the end of the line and wait. We asked very nicely and further she acted like she just absolutely hate her job. Took forever to take customers service because she cares more about getting off early to catch a bus. If she seems to hate her job that much, might as well spare the customers a terrible

Good location, fresh ingredients, salsa bar, good sauces, the rice wasn’t that authentic. We ordered the chicken enchilada (cubed chicken with great red sauce and topped with pico de gallo), fish taco (flour tortilla with cabbage garnish that needed more cumin-mayo dressing but had fresh fish); avocado salad (I replaced the dressing with pico de gallo, yum) and a dos tacos plate. The beans were good.
