Chef Kevin Lasko spent years working in some of New York City's most acclaimed kitchens, including Jean-Georges Vongerichten's Mercer Kitchen and Drew Neiporent's Montrachet. For the past ten years, he has been the Executive Chef of Park Avenue Seasons, a new-American restaurant located on the Upper East Side of Manhattan.
The Backroom is actually our commissary kitchen, but we figured if we weren't using it to prepare for a wedding or event, we should use it to make new friends. We've built out the space to house an intimate open kitchen and dining area, where we'll host dinners on Friday and Saturday nights. The menu will always be changing, always local and always delicious.
Rinse kumquats well with hot water (to remove pesticides & wax), slice 1/4 thick (don't worry about seeds), combine all ingredients in a small pan and simmer for 10 minutes, chill. Pour 2 oz Dark Rum in a highball filled with ice, top off with ginger beer and a spoonful of kumquat marmalade, garnish with lime wedge.

My wife and I are so grateful to Vermont Farms Catering for the amazing food and service at our wedding. The food was absolutely incredible—if we could, we would order our entire menu again for a private dinner. Some highlights included Butternut Squash Arancini, Miniature Lobster Rolls, and Stout-Braised Short Ribs with Pumpkin Risotto, Sage, and Crispy Potatoes. The service was also amazing. My wife and I had heard that the bride and groom rarely eat at their own wedding—we are so happy that we did!

ABSOLUTELY HANDS DOWN THE BEST CATERING TEAM IN VERMONT!! We are honestly not sure where to even start. We knew after our first phone call that Kevin and Katie were superior to anyone else. After the tasting (which completely exceeded our expectations) We knew we could not have chosen anyone better. They truly made our wedding, without a doubt, we owe it all to them. Our guests RAVED about their food and service all night long. We placed an order for prepared food for dinner for 19 people for a bachelorette we had at Killington. The food was ABSOLUTELY delicious and presentation was gorgeous. All the girls were raving about how amazing the food was. I 100% recommend Vermont Farms Catering to anyone who is looking for an amazing meal while in Vermont. They were also super accommodating with preferences like making something Gluten Free Friendly or asking for pasteurized cheese. Thank you again!

Absolutely, Positively the best caterer in Vermont. We were married at Amee farms in 2015 and Vermont Farm Catering catered out wedding weekend. I was nervous because some of my family are finicky, but Vermont Farm Catering had them trying/eating edible flowers the first night!!!! I can't thank them enough for all the delicious fresh, local food and beverages were we served that weekend. They surpassed our wildest dream wedding 😘
