Box Turtle Bakery is a home-based business sharing space in my kitchen and taking over my former dining room. Officially I am organized as an LLC with myself as the current sole owner/operator. Since I produce low-risk baked goods, I am inspected by the North Carolina Department of Agriculture rather than the County Health Department.
I don't receive a restaurant grade, but certainly promise to maintain a very sanitary bakery and would be happy to give you a tour at one of my open houses or during my regular pickup hours. I am committed to doing the most I possibly can with locally-grown whole grains. I will have to import in grains from out-of-state sometimes and will always be happy to describe the source and reason for specific grains.

Sourdough bagels done in my whole-grain full-flavor style - boiled but still not as chewy on the crust as some. I typically do them plain or with toppings of either onion or poppyseed. Keep in the bag and eat in a couple of days or freeze. Two interesting variations on the typical biscotti flavors: Chocolate Almond with fresh-milled cardamom and Sweet Potato Tart Cherry.
I can mill these on request, but if you are at the Carrboro Saturday Market just get them direct (where applicable) from Brinkley or Red Tail Grains. Most commercial flours you buy are likely a blend of multiple varieties or at least from different farms. The characteristics of locally grown grains can vary widely from year to year and may or may not reflect what is typical for their variety.
Box Turtle Bakery is only open for scheduled baking days and special events. I am located in Carrboro, North Carolina in a neighborhood called "Arcadia Cohousing". I am 3 miles North of downtown Carrboro and 1/2 mile to the Northeast of McDougle Elementary and Middle School. I am also about a 1/2 mile South of Calvander.

As a regular patron the past 4 months of this fine local bakery, once or twice weekly at my Carrboro farmers' market, I have come to rely on Box Turtle for my regular breads and the occasional English muffin. Abraham has been kind enough to cut me a half loaf when I don't want a whole loaf that I might not finish by my next visit, and lately I have been favoring his plain spelt bread which has a sturdy flavor that is perfect for my open face lunch sandwiches.
Today though I was looking for tortillas to use up some leftover chicken with and was delighted to find a packet of six, also

I was lucky enough to get regular weekly bread deliveries from Box Turtle Bakery for awhile there. I happened to be on Abraham's weekly route, so it worked out. Now I'll have to actually venture out to Carrboro's Farmer's Market or South Estes Farmer's Market to get his home baked breads and treats. And when I say home baked, I mean literally baked in the special custom designed wood burning bread baking oven attached to the home bakery in his house.
