This place is the best, everything is so good but my all time favorite might be the lemon blueberry cupcakes

Shannon is the nicest and most talented baker around. the lemon blueberry muffins are equivalent to a spiritual experience. don’t walk, RUN to try some of her treats.

One of the best pumpkin breads and cookies we’ve ever had!! Don’t get me started on the cupcakes. I’ll be putting in a custom order for Halloween. On my last visit I saw that she was on one of the Food Network’s Halloween competitions!!!

Went in about a week ago on a whim. Got 3 different cookies and a six pack of day old cupcakes. Beyond delicious. The cupcakes tasted as fresh as can be. The butter cream frosting is light and airy. Super tasty! So happy to have a great little bakery in this part of the Westminster area! I love visiting bakeries and have been to a ton around Denver and have always lamented that we didn't have one closer to the new Westminster downtown. Just tried The Happy Caker for the first time tonight and the snickers cookie was especially tasty!! The lemon blueberry muffin was super light and fresh tasting and the fruit in the home made pop tart was a nice balance with the crust. The owner was super friendly as well. One time and I already know I'll be a regular.

What an incredible experience from start to finish. We requested a Piano cake for a family members 100th birthday and Shannon did not disappoint. The cake was beautiful- exactly what we were expecting and beautifully made. The cake was also delicious- everyone said it was the best cake they have ever had. I was in a pinch to get a cake for my son's birthday while visiting family in Denver area. Happy Caker came to my rescue. She was super communicative and easy to reach both via email and then eventually text message. Additionally the cake looked fantastic, tasted terrific, and was priced very reasonably. Shannon was excellent to work with. We had a quick turn around from when we placed our order to when we needed it and Shannon delivered (literally)! The structure was large and looked amazing. The birthday girl was so impressed with how personalized and sophisticated it was. She made it so quick and was kind to us the whole way through.

I have made two orders with this company in the past few months, a cookie decorating kit and my son's second birthday party cake. I was blown away by both! The flavors are perfect and the products are so beautiful. Shannon makes it easy and simple and I'm so grateful I found her!

If you need a cake in the Boulder area - the Happy Caker is the person to call!!! I live in Virginia and wanted to get a gift delivered to my sister and brother-in-law in Boulder. I discovered that many businesses in Boulder will not deliver to the "mountain region" but thankfully, I found the Happy Caker. Shannon was so responsive by email, and creative in coming up with ideas for the cake. We ended up deciding on a theme relating to my sister's love of hiking with her husband and dog. Here's a little info about the cake:
Design was taken from a photo I found online and Shannon was able to recreate it. This cake fed about 30 people. It could be more depends on cake slices; little kids don't typically eat a large slice. I had a choice of buttercream or fondant; this one was buttercream. Cake flavor of choice: Oreo

Shannon's cake was a hit for my sister's 50th birthday party. It was beautifully made and the attention to detail was exact. The theme for the party was Game of Thrones. She was able to make the dragon, dragon eggs, and Daenerys (like a Funko POP figurine) out of fondant. Even the waiter's were taking pics. The cake was delicious. We picked Cookies and Cream as the flavor. Thank you for your excellent work. I will definitely use you again.

Shannon knocked this cake out of the park!!! Not only was it impressive and beautiful, it was meticulously detailed and DELICIOUS to top it all off. Everyone at the party was super impressed and my husband didn't want to ruin it by eating it! Lol. Can't praise this cake nearly enough. It was moist, and not overly sweet. I went with the peanut butter cup and chocolate cake since hubby is obsessed with Reese's. Thank you so much, Shannon! You were the star of the night!!!
