With 16 years in the Food, Beverage and Event Business, Mike has many varied events both completed and still being invented. We not only like to work with the public, but especially enjoy working with others that appreciate great food in unusual circumstances and locations. Flying barracuda BBQ sauce is made in small hand made batches to ensure that handcrafted quality and control of succulent flavor. Garlic and apricot are the subliminal tastes that just keep building. In combination with natural honey, a light smoky dusting, and a bit of crushed pepper and lots and lots of love this sauce will be the best you have tasted in years, if not ever.

My work has rotating carts that come every Wednesday during our lunch breaks. Today was the 1st time they have came. I am glad they did, they definitely gained some new fans. Many employees in the cafeteria raved about the size and quality of the sandwiches.

I got the brisket sandwich and baked beans. My sand which was 1/3 fat. I don't mind fat, fat is flavor but this was too much. I had to do surgery on the meat in my sandwich, throw away a third of it and reassemble the sandwich. The baked beans were more mulched onion than beans. I will not be ordering from them again.

So, I have been avoiding the food trucks coming to work (new thing due to no food options on a large medical services campus) but..... All early afternoon there was a mass migration of employees parading back in forth with food from Flying Barracudas that I hadn't witnessed from other food trucks visiting in the past 2 weeks. I hate lines and waiting for food on an hour lunch. The two guys running it were like well oiled machines. Food was hot & ready off of a mobile bbq/ smoker. The sandwich was huge (had to cut it in half). I got the BBQ pork and macaroni salad. Really good! Slightly

These guys are great and know how to spoil a BBQ lover. Asked for a sample plate and even though it wasn't on the menu they made one for me and it was amazing. The pork, chicken and brisket are tasty enough enough that sauce isn't needed and its easy to eat, DEFINITELY not dry. I highly recommend this place for BBQ lovers.

These guys had a food cart in the Haven apartment complex in Wilsonville. My fiancé and I both got the rib plate special and it was absolutely fantastic. I’m pretty picky about my bbq and this was very good bbq. The beans and coleslaw were also fantastic.

Their food truck posted up at my apartment today and I am so happy they did. The staff was very friendly and insanely fast about slinging out the good eats. The brisket sandwich is delish and the portion size is well worth the price. Definitely recommend!

Would you, Barracuda? Yes I would. Again and again. We were fortunate enough to have Barracuda cater to our apartment complex! I went with the plentiful brisket sandwich topped with coleslaw. The Brisket had a fantastic tender fatty consistency that just melts in your mouth. The coleslaw was also crisp and delicious. Come for the brisket and stay for the sauce! The sauce was sweet and savory. If the real thing don't do the trick, you better eat up this sandwich quick!

My boyfriend and I have since tried the brisket sandwich, pulled pork sandwich, roasted garlic butter chicken sandwich, bbq soy curl sandwich, pork ribs plate, and beef ribs plate.

I got "The Mullet" which is their huge BBQ sandwich with half pulled pork and half brisket with cole slaw on top. Super good and super messy just like it should be. For $11.00 I feel like I definitely got my money's worth. Couldn't finish the thing in one sitting, so saved some for leftovers. Would definitely buy again.

This place catered a BBQ party our building complex put on for all their tenants, and man was it good! They had ribs, garlic chicken, corn on the cob, potato salad, and the most awesome BBQ sauce I've ever had. I want to find out if they sell it.

I am so happy that SW Portland now has an excellent BBQ place with fresh excellent food.
One evening I had the slider plate ($10) which was three sliders; fried chicken, pulled pork, and beef brisket. It was so delicious that I went back a couple nights later to get the sampler plate ($18) which had ribs, brisket, and chicken (not fried) with two sides. I was not disappointed and I look forward to my next visit. The ribs were nicely cooked but the highlight was the moist BBQ chicken

Simply DELICIOUS. I ordered the Sweet Heat Burger and watched some playoff hockey at Uptown Market where Flying Barracuda is doing amazing things. We also got some brussels sprouts that knock the socks right off your feet. The burger was massive! Loaded with all the good stuff and a healthy portion of tater tots. The food was delivered to the table very fast and hot. Can't say enough good things about what Big Mike and Flying Barracuda are doing.

I seriously cannot stress this enough- if you need meat catered, you HAVE to go with Flying Barracuda. We've known Big Mike for years and his service and food are above and beyond. We had my dad's retirement party catered this past weekend, and the pulled pork and garlic chicken were a huge success. Everyone loved it, raved about it, and wanted to know where we got it! Honestly, we will never have our meat catered by anyone else, ever again. I'm not kidding.
The pulled pork is amazing and it makes great little sliders, especially with extra Flying Barracuda barbecue sauce on top

Known Mike for close to 17 yrs. Have eaten his cooking many times. He has catered our union picnic for 400+ guests the past 8 yrs. Always a hit. His sauces and rubs are delicious.
Several years ago I was cooking for my son's football camp. I needed 130 lbs of pork smoked, but had no smoker. I called Big Mike and asked if he could help me out. He not only smoked the pork, but pulled it too. When I asked his price he only asked for a case of beer. He did this for the kids; from a rival high school. That's the kind of guy Mike is.
