Owner and chef Betsy Thorleifson founded Nine Cakes in 2008, and creates irresistible cakes to mark each milestone event in your life. Now Nine Cakes is a team of cake makers across two locations. We have a boutique cake studio in Brooklyn, New York specializing in decadently delicious cakes with elegant, handcrafted designs.
Our upstate location opened in the spring of 2019 in Hudson, New York. This retail location offers a full counter of delicious treats, slices of cake, and also beautiful wedding cakes. Starting with well tested recipes, each cake is made entirely from scratch using fresh, all natural ingredients. The simple ingredients of butter, sugar, flour, eggs, and cream turn into the most glorious cake layers and fillings.

Services
Timing- Depending on the time of year you'll be getting married, two to six months before your wedding is ideal to start the process of working together. We've also worked with far less lead time, always feel free to inquire. Pricing - Our cakes are priced based on the number of servings and how intricate the design will be; our pricing starts at $11 per serving, there are minimum orders based on the time of year.
At our cake studio in Brooklyn, we make all of our cakes to order. Whether a towering beautiful wedding cake with hand crafted sugar flowers, or a custom first birthday cake, we create bespoke creations for each of your milestone events. By appointment only. At our retail bakery in Hudson, we offer a delicious selection of treats and cakes.

We saw all 5 Star reviews, so when visiting Hudson earlier this week, my husband purchased a box of 6 macaroons -raspberry and pineapple flavor. They were horrible: they tasted like eating raw sugar cubes straight out of the box and the texture was weird. The raspberry and pineapple flavor could hardly be discerned through the overwhelming and sickenly sweetness. Maybe we should have purchased a cake, but I'm not sure if we will take the chance.

Betsy and Haley were a dream to work with and their level of talent was unreal. We wanted 3 smaller cakes for our wedding, instead of one large one. I had a couple of reference photos of what I liked, but in my mind they didn't make sense together. They were able to design the cakes to have all the parts that I liked in my reference photos and were able to make the cakes look like they belonged together without being too matchy. Blindly ordering a wedding cake from out of state can be a nerve racking experience. But the staff at Nine Cakes were so accommodating and so helpful that it was actually a good experience. The cake was just stunning and from all reports totally delicious. Our daughter and new husband just loved it and it just made them so happy to have such a special cake. And for the parents who couldn't be there - it made us feel so much better. Also important - it was delivered as promised and right on time. And a special shout out to Betsy who brought some light to these otherwise dark time.

We stumbled upon this cake shop and I fell in love. We ordered two slices and a mini cake. They were incredible. They were dense with rich butter cream and it tasted as good as a good quality wedding cake bakery. We got both the gluten free chocolate cake which had hints of coconut and the regular. I wish this shop was closer to me and I could pick up slices of cake of the daily. Until then I will just have to stop by when I am in town. A MUST STOP IN THE HUDSON VALLEY!

I may have procrastinated a bit in finding a wedding cake, but it was truly for the best because I found Nine Cakes! They accommodated a very abbreviated timeline (circa 6 plus weeks, not months) and made us the most beautiful and delicious cake. I have never been to wedding where I remembered the wedding cake, mostly towers of gaudy fondant and flowers and chalky cake with overly sweet buttercream. Our strawberry lemonade and chocolate strawberry cake was not only elegant and beautiful but so amazingly delicious that I am still having guests say they are craving it. The Macarons are THE BEST EVER!!! as is everything else!!!
Macarons are large and light and melt in your mouth like no other macros I've ever tasted!
Vegan cakes are wonderful - I bought a small one to share and wound up eating it all before I could share!!!
They are friendly and wonderful people! And they have a made to order cake place (thank God not a retail place) a few blocks from my home in Brooklyn. I will never pass by without buying a few goodies!!!

Can there be anything prettier on a summer day, than sitting inside on Nine Cakes' dramatic black chairs against the pastel colors around you with eye-candy pastries in front of you? No. This place is so freaking cute! I don't like visiting family or friends with empty hands- so prior to visiting hubs' friend on Lorenz Park on an early Saturday evening, Nine Cakes seemed like a good spot to pick up something sweet to bring with us.

They made the perfect cake for our wedding. The flavors were so creative and amazingly tasty. They made the color and sugar flower to match with our wedding invitation and floral decor for the day of our wedding. Nine Cakes made the most beautiful wedding cake for us. We were initially unsure of the cake design we wanted, as we liked many designs so in the end we just told them our vision and asked them to make it a surprise for us. We didn’t see the cake until our wedding reception and wow, it was beautiful, and they really did deliver! On top of the cake looking good, it tasted so delicious that our guests gave so many compliments and kept asking what flavor we got (Hazelnut). Communication was fantastic; Betsy and Jess were very responsive. We highly recommend Nine Cakes for wedding cake needs!

I ordered a wonderful lemon strawberry cake after tasting a slice the week before at the new store in Hudson. I bought it for my Mom's 93 rd Birthday and my sister's 60th. My 93 year old parents and the whole family really loved it at our celebration this past Sunday. So happy to have a great bakery in Hudson ! We've been weekending upstate for ten years and it's been a huge gap in the food scene. The service is also friendly and expedient. Congrats to these fabulous bakers.

Betsy made three cakes for our wedding a few years back. We could not have been more pleased. At the tasting we gave her description of what we hope for based really off no reference points (photos, her cakes, etc..). She managed to produce exactly what we asked for. Being amateur bakers ourselves we can be picky but were blown away by the quality of the cake. Nearly every person raved about the wonderful taste. This was not just great wedding cake ... Absolutely the best cake you'll ever eat in your life, and Betsy is the sweetest person ever… She is very talented and can make the most delicious and beautiful cakes and cupcakes!!! We travel here all the time from California just for Nine Cakes! Order several so that you have extra when you go home. Also I've never had such amazing buttercream frosting before!
