What a delightful encounter at the Henderson Farmer's Market....I met Alina and spent some time talking about her breads and the bakery she and her husband own. When I saw these beautiful lemon tarts she told me about the special elderflower that is used. I couldn't resist.
The crust is crisp and flaky, the filling is delicious, creamy and lemony and bright. It is delicious.
I'm looking forward to trying some other items and so happy to have Alina!

The place is amazing - everything is baked from scratch in small batches. The location is a commercial kitchen and they are only there Sundays. The best way to go is to text or call and order ahead because hot items sell out quickly. They are also to be found at farmers markets. The review below about a strawberry shortcake must be a mistake - they do not offer that (check their online menu). Alina, the owner and baker, also confirmed she never did (she doesn't do that type of cakes). The review must be for the famous Freed's bakery (who does fancy strawberry shortcake). I contacted yelp

I have to rave again about the greatest new bakery in town is FRED'S INTERNATIONAL WHOLESALE BAKERY. Alina Kolman 34, moved here in 2018 from a small village of 300 people in the heart of Transylvania, Romania. After going to school in Bucharest she wanted to pursue her love of baking so after meeting her husband, Fred Kolman and they decided to establish a very- high bakery in Las Vegas.
