RUT (pronounced "root") opened Spring 2019 in Spokane's South Hill neighborhood. The Modern American-style Gastropub features vegan and vegetarian comfort food as well as some healthier vegan options, alongside craft cocktails and a curated beer and wine menu. Founders Justin Oliveri and Josh Lorenzen have been a team since their youth, and they profess a devotion to both the food culture and natural beauty of the area.
On their days off the duo can usually be found rock climbing or enjoying other activities the Pacific Northwest has to offer. Their passion and connection is reflected in the restaurant itself, which encourages patrons to stay awhile with its modern, plant-filled interior that features thoughtful lighting, natural textures, and paintings by local artist Hazel Miller.

This is the best restaurant in Spokane, and I've gone to 𝘢 𝘭𝘰𝘵 of restaurants here. My friends know I'm a pretty harsh critic when it comes to food. I've been vegan for years and I'm passionate about cooking; there are so many vegan dishes offered at other restaurants in Spokane where you can tell not much thought or creativity has been put into them, and they're overpriced nonetheless. I've been going to Rut since they opened, and they've consistently served great food while also offering unique dishes that you can't find elsewhere in Spokane (vegan or not).

Always a pleasure coming here! They made my birthday extra special. For a 21st birthday it was exactly what I was looking for. All of my friends (even non vegan ones) enjoyed their meals and the drinks were very good! Servers were also very polite and helpful. Thank you again for making my birthday special!! Cant wait to come back soon

Very friendly staff. The food is all vegan and that's what brought me in. I ordered 4 food items and they were tasty, but a little on the greasy side. Its pub food done vegan and slightly more expensive.
I ate it ALL and will probably be back, but it's more of a greasy, heavy meal.
Side note: it's a little crammed in there. Lighting was nice, it was a weekend and crouded. I got my food to go and took it home so I didn't get to experience true table service but the brief interactions with staff that I did have were great.

Good place with great food, and attentive service when dining in.
If you love vegan food, this is the place to go!
However, don't try and call for any reason. They are often rude and stressed sounding on the phone. Hence the reason for the four versus five star.
Random servers answer the phone, basically whomever can get to it, so they may be friendly...or not!

RUT is a sophisticated vegan take on classic American food. The food is not only pleasing on the palate; it is also appealing in appearance. I usually order the Jalapeno Mushroom Burger and it is layer upon layer of taste explosions. The crunchy texture of the fried onions prove to be the perfect final note to this array of complementing vegan cheese, jalapeño relish and vegan patty. My only suggestion (this could be solely a personal preference) would be to tone down the saltiness/spice of the fries. The burger is so good that the fries are not even needed, and may even distract from the burger

One of my favorite places in Spokane! Everything I've tried has been fantastic! My go to's are the buffalo cauliflower, jalapeño mushroom burger, and the dirty fries - so good! The cocktails are also amazing...did I mention that the staff is so friendly & accommodating?! Spokane ha lucky to have Rut!

Came here for my birthday and was simply blown away.
Started with Thai Cauli wings and Watermelon Poke. I've been to a lot of vegan joints and had a lot of cauli wings and these ones will definitely stand out. They have a crust and are still somehow crunchy even with the sticky sauce coating... magic. I've seen the watermelon poke trend and have been skeptical but was pleasantly surprised. The watermelon was too sweet overall in the dish for me but I'm glad I tried it.
Burgers, truffle mac, and bok Choi bowl were all fantastic. The Mac and cheese was sooo creamy. Loved the broccolini

So I live in Post Falls, but have no problem driving 30 minutes to this place. The food is SO delicious and VERY consistent. I don’t eat out at most restaurants due to the lack of quality and care that noticeably goes into their menus. I know with pure confidence that the cooks at Rut genuinely care about the quality of what they put out. The menu is so creative and nothing from Spokane to CDA compares. The food and drinks are delicious. The brats and potato dish with mustard seeds was filling and tasty, lots of flavor. The drinks are generously sized and flavorful. We ordered the vegan cherry cheesecake and house-made ice cream based on the waiter's recommendation. The cheesecake was decent and large, but I liked the ice cream better just because I can make a better vegan cheesecake and I was too stuffed to finish it.

Ordered the fried not-chicken sandwich with green salad to go. The dressing that came with the salad was so creamy and flavorful. I usually have to add salt and pepper to everything (truly), but not this time! The chicken remained perfectly crispy and I loved the pretzel bun. I'll try a burger next time!

I made an order through Grubhub on Sunday. After a while the driver called to let us know the restaurant was closed and cancelled our order. A few days later, I decide to try again. I order, only to find out later again that the restaurant is closed. FOR REPAIRS. Why have an active page on Grubhub if you are closed???

The all vegan menu has a lot of delicious options that make it great for people looking for different types of food. All items tried were delicious! The only issue was the price to volume ratio is pretty terrible. More veggies would be a cheap thing to add to allow two people to actually get full from a $60 bill.

My sister, who is vegan, recommended this restaurant, and I was very pleased! I came with a friend and we shared the jalapeño mushroom burger and chana masala. I LOVED the chana masala. The burger was good, but I am not really a burger person, so I probably won't get it again. The service was very fast and helpful in answering questions about the menu. I'm glad the South Hill has a vegan restaurant!! I can't wait to try more items on the menu!

In town and had to hit this place up! Lot of yummy choices. I've been on a mission to try Bahn Mi sandwich for awhile now. The one here was one of the better ones I've had. Fresh bread, veggies and sauce and enough jalapeño for a little kick. The gazpacho was nice too. We will be back for dinner tonight too

Rüt bar and kitchen- what a delicious new stop to my Spokane restaurant list. The inside is cozy and comfortable with large windows. It is positioned right next to Rosauers grocery store and offers fast service. It's a great lunch stop for the neighborhood and can easily be walked to from all the nearby parks.
Since it is right next to the grocery store, you will never have to struggle to find a parking place. If you do have a larger group it would be helpful to call ahead and make sure that they have room or tables to push together. There's probably only room for 10 to 12 different

So, decided to give it a try again since it's been a few years and while there are some improvements sadly still not a great vegan option for me.
There's fries with their 'burgers' now, the ranch isn't sweet anymore and their sriracha Mayo dipping sauce was good. The 'not chicken' chicken sandwich was good though it would be good to know if it's soy based or..? My mom tries to avoid soy and since it wasn't listed we spaced out asking but she had a stomach ache after so we're guessing maybe it was.

So glad we came here on the last day of our trip. Wish I could pick up this restaurant and put it in Alaska. We got the tofu bahn mi, cauliflower wings, and matcha cheesecake. I got a cocktail too. The bahn mi was incredible and the tofu was very flavorful. The bread was perfect crispy to soft ratio, the sauce was delicious, and the pickled veggies hit the spot. Very nice ambiance, our server was very nice. Still not entirely sure if they allow dogs, did overhear some talk about my pup while we were there.

Tried Rut out for the first time. Very friendly staff and all tables were placed farther apart for social distancing which was nice. We got a few appetizers to start, the brussels sprouts were a hit with everyone. Also enjoyed the buffalo cauliflower. I tried my first beyond burger, it wasn't bad at all but I don't see how anyone who eats meat can say it tastes just like real beef. I was going to order the Mac and cheese but I found it strange that it has coconut in it and would make it too sweet to my liking. Someone else at the table ordered it and I tried a few bites. Great place to try for those open to plant based foods! Took my friend who is dairy-free and we had a blast. The server was super nice and patient to answer all of our questions about what's in their food (like Harissa Ketchup!) and get us started with drinks and appetizers.
I personally thought the Buffalo Cauliflower Wings were too spicy for my liking, but I would definitely want to try their Truffle Mac the next time around. Prices are very reasonable considering everything is plant based and portions are plentiful!
