Everything at The Establishment begins with fresh, sustainably sourced seafood. Our menu will always reflect our clean, non-complex, and balanced approach, delivering a selection of thoughtful and refined cuisine. We also offer an ecclectic menu of classic and modern cocktails, rare and hard to find bourbons, and fine scotches. Located in the historic James Gregorie House at 28 Broad Street, The Establishment is a seafood-centric restaurant focusing on the fresh and sustainable ingredients surrounding the area.

Our philosophy in the kitchen is simple: it's all about blending the flavors that exist already within our culinary components, enhancing and balancing our proteins and vegetables by executing proper cooking techniques and showcasing the freshness of the food we serve with impeccable focus. Although originally from France, Malbec has become Argentina's signature grape. Depending on the winemaker's style, it can be expressed in a fruit-forward style, as an oaked example with more complexity and body, or blended with other varietals.
Every month in The Establishment's eNewsletter, we send out a recipe for a dish or a drink for you to try making at home. We've collected them here and will continue to grow this list. Mix the zucchini and squash together then saute on high heat in canola oil until just barely cooked, not longer than 1 minute.

We absolutely love this place. It is our go to date night. Beautiful atmosphere and some of the best food I've ever had! Treat yourself to a mocktail. It's worth it.

I have only one regret...how the heck we haven't come earlier?!
With the current situation many restaurants in town have suffered decrease in quality in their offerings, but not this place!!!
Everybody, and I mean EVERYBODY from the staff was genuinely involved and caring from the moment we walked in til the moment we walked out. Breanna, Paula, Shane, and the rest whose names we don't remember...They all made us feel like we were the most important people on the planet.
And the ambiance, food, and drinks were just as amazing!
Wholeheartedly recommend!!!

My girlfriend and I had an amazing experience at The Establishment. So much so that I have recommended the restaurant to almost everyone I have spoken to since we went. The food was among the best I’ve had in Charleston. Service was thoughtful and prompt. On that note, I have to admit that I am left disappointed. We already had a bottle of wine and were interested in another glass. Our waiter suggested another bottle since they can re-cork if we didn’t finish it. He told us of a special they were having. A $150 bottle that they had for $97. Great deal! We declined at first but when he offered

We went last night and loved it! We had the hydroponic lettuce, shrimp, ribeye, charred cabbage and gnocchi. All were delicious! Andy was super thorough and friendly.❤️

Omg!!! Everything was amazing and we ate half the menu. Must try the shrimp (if it's on the menu) & the home made ice cream!! Service was out of this world. Best date night we've had in months. Highly recommend.

We had our company party here last week and it was the best experience I have ever had. The food and drinks were amazing to say the least, but what really made the experience even better was the service. CT and Matt were so hands-on, helpful, knowledgeable and so incredibly kind. I would recommend them and The Establishment to anyone visiting Charleston or to any local who hasn't yet been. Your experience will be unforgettable! Attention locals. Let them know you are a local…stop by, or call. They seem to have some seats set aside so LOCALS can eat out on busy nights.
We had excellent service, and a wonderful meal here.
We sat at the chef’s counter by the kitchen which was really really fun.
The menu changes often…fresh, local, DELICIOUS!

Went here for the New Year's Eve experience.
First of I was under the impression it was a preset menu. No you pay $100 and get $100 credit per person ok that's fine.
Appetizers were amazing compliments to the chef that prepared the appetizers.
The main course..... I ordered the tomahawk and my wife ordered the soup.
My steak was blue rare if you're not familiar with blue rare it's when the temperature inside is below rare.
My wife's soup it's an insult to soup to call it soup it was hot water with the ingredients mixed in. They gave her a piece of bread to go with

The only thing holding my rating back from being five stars was under cooked risotto, and a bit of dry fish... But in the end our party of six was over the moon with the food, the ambience is off the charts, and the service was delightful. My wife has already asked that that's the first place we visit when we return and I will tell you that this restaurant with survive in any city. We absolutely loved it and want to give the staff and chefs a standing ovation. Thanks for a wonderful experience

My friends and I decided to take a "treat yourself" kind of dinner and from a local recommendation we went with The Establishment. I am so glad we did. We had such a wonderful experience and I can't wait to dine there again next time I'm in town. The hostess was so friendly and so accommodating to us running behind on a reservation time. As someone who works in hospitality I can especially appreciate those who are both good at their job as well as genuine. Ct was amazing. One of the best servers I have ever had. He really did elevate the experience between his menu suggestions and his winner personality

This place was recommended to us after our reservations had been accidentally canceled at another restaurant and they refused to honor them. They recommended the Establishment. We are SO happy our reservation was accidentally canceled. This place was AMAZING!
We got three appetizers- duck, spaghetti squash, and the beef carpaccio. All three were delicious. The carpaccio, however, with the ras el hanout, was fab. The duck was crispy and delicate, the spaghetti squash was rich and light - an amazingly balanced dish.
Our entrees continued the experience. My hubs had the snapper with the popcorn

The Establishment offers an unparalleled blend of excellent food, elegant ambiance and impeccable service. Hard to choose a favorite as they are all delicious but the gnocchi and deckle appetizers are outstanding. The snapper and pork chop were cooked to perfection as was the swordfish and chicken we enjoyed on a prior visit. Looking forward to coming back, it's my new favorite place!

We had an amazing dinner last night at The Establishment. Everyone of the staff was extremely friendly and responsive. Brian Jarusik, General Manager and somm·lier (II), spent a lot of time helping us match wines for our appetizers and entrees. His knowledge of wine is amazing. Our waiter, Chase was very friendly and made sure our experience was special. We highly recommend sitting at the kitchen bar to watch the entire preparation unfold. Talk about organized chaos! That said, we will be back with family and friends so they can enjoy as well.

My husband and I came here to celebrate our wedding anniversary, all staff we came in contact with - and a couple that was seated at the booth behind us - wished us a happy anniversary. I don’t typically order cocktails, but when I read the description of The Impressionist I had to try it and was so glad that I did! Our experience from appetizer to desert was wonderful. We enjoyed the atmosphere, although there were others around us it still felt intimate. Our server, CT, was very attentive and extremely personable. We will definitely be back! Thank you all!!

Great ambience, the food was amazing. No long lines to wait and get served since it does not have the tourists visiting Charleston. Scallops and halibut were delicious. Not a cheap restaurant but you get what you pay for. Outstanding service, both managers stopped by the table to make sure that everything was as requested. Super friendly and amicable. Highly recommended, by the way the name of our waiter was Chase and he was awesome!

Second visit. (First visit was with a reservation in the dining room, fabulous!) Now a Saturday evening, no reservation. Called and Lauren answered. Asked if there was room at the bar. "Absolutely!" Two spots saved, awesome. Carley and Brian are pros behind the bar. Gnocchi/crab and tuna apps very good. Followed by Swordfish and scallops. Beautiful restaurant. Friendly staff working hard and delivering great food and service.

All the stars for The Establishment! We've been twice and it's been phenomenal both times. The crispy duck appetizer is not to be missed. But the star is hands down the lump crab gnocchi made out of ricotta. Holy. Crap. We could have just ordered the 5 plates and called it a day. I mean it's a must. The dessert menu was a little disappointing the night we went, but I just ordered another crab gnocchi instead so all was well. Gray service too! Ps, the foot rests under the booths were the best idea.

I've been here 5 times so far and every time it's an amazing experience! Great options with new choices every time. The chef and staff take a lot of pride in the restaurant and your experience. I can't recommend just one item on the menu because anything you try will be PERFECT.

We were directed here for the cocktail program, given that we do not want to deal with tiki drinks and screaming college students. The person who directed us here was not wrong. We had The Poet and The Impressionist and they did not disappoint. The Poet is Kentucky in a glass. It had the flavor of the Bourbon Slush I make for Derby, but classed up. And boozed up. The Impressionist was not too sweet, which is saying a lot for a drink with pear purée. We spoke with the bar manager who created them and were really impressed with his care. And his disinterest in whatever tiki nonsense is taking hold

Absolutely spectacular from start to finish. The staff, decor, drinks, and food were all perfect. From the smiling and helpful hostesses to the waitstaff and management. Everyone was attentive, friendly, informative, and exceptional at their jobs. The chefs came out to check on us as well, which is always a nice touch from a top notch restaurant. Even the bathrooms impressed my bride...and she loves beautiful things!

Drinks: Wine list excellent, my wife enjoyed her rose and then Roussanne. My bourbon based cocktails were both awesome, the one with balsamic vinegar was memorable...

First night in Charleston was a success! I was in need of good food that had open reservations because Valentine's and President's Day weekend can be very hectic and I found The Establishment on the list. Our party arrived early so we hung out at the bar and waited to be seated. They were running behind with seating so we waited an extra 20 minutes before getting a table. I enjoyed the pianist playing old and new tunes, it kept us entertained for the most part.

Both gnocchi and lobster spaghetti were drowning in butter. I got the impression that the staff either wasn't trained or didn't seem to care about guests' allergy or dietary restrictions (hello Benadryl!)

That said, lamb with polenta was surprisingly delicious and multi-dimensional.

Affogata was one happy ending.

Slightly disappointing for sure, given the price tag.

My boyfriend and I had the best time at this establishment(lol) last night. We went here for restaurant week! The food was awesome and the drinks were strong which was a plus! I'm from Arizona so when my boyfriend boasted about going here, I became filled with excitement since the food looked amazing and the restaurant had very good reviews. It's the perfect spot for date night

If you're in the area, I definitely recommend you going here!

I don't think I can rave enough about this place. A girlfriend and I went to a food blogging event and won a gift card and even met the head chef (Matt?) while trying some of their seafood stew. He recommended that when we make the reservation to request the chef counter so we did just that! We finally were able to visit this last March and I completely forgot to express how amazing it was until I met the marketing manager recently who reminded me of how awesome it was!

While I hate people who call themselves a foodie, this was one of the best meals, if not the best I have had in Charleston

For our last night in CHS we wanted to eat and eat good. We were literally walking around CHS trying to figure it out, where do we go... Well we stumbled upon this decadent gem of a restaurant called The Establishment. For us this isn't an everyday dinner spot. It is an occasion place. A spot made for celebrating so that's exactly what we did, celebrated our last night in South Carolina! To say we ate good is an understatement. We dined like Kings and Queens. To step in off the street and be seated at the Chef's table immediately was pretty cool. The place filled up quickly though
