Before you read my comment I must say that this can be turned around in one or two days by simply following a recipe. Or shut down for a week and experiment but I must give them my honest opinion
Please do not use this as a good example example of what Caribbean food taste like. I'm not trying to be harsh but I'm a critic of my food and when I cook it, if it doesn't taste good I say so, even when people think I'm overly critical because they love it. That is a hallmark for any real cook. I've tried it more than once and the food was not properly seasoned nor did it taste
