Welcome to Fujiyama, the best of Japanese cuisine right in the heart of Prescott, Arizona. We offer a delightful sushi bar, serving the freshest hand-rolled favorites, in addition to various steak, chicken, and seafood lunch and dinner entrees-all in a relaxed atmosphere that you'll love. Their friendly staff will always take the time to answer any questions you may have, and they welcome you as they would their own family.
After many years "Mama-san" and "Papa-san" sold it to Ryan, who operated it for some years. After a stint as a Teppanyaki Chef in California, Tony came to work for the then-current owner Ryan, studying the operation and meeting the clientele. Then, in 2006, Bao and Tony Vang purchased the restaurant and have been building the business ever since.
Top sirloin steak grilled your way with our delicious teriyaki sauce, served with a California Roll on the side. Our delicious shrimp and vegetable tempura with chicken teriyaki and a California Roll on the side. Shrimp and assorted vegetables dipped in a light batter and deep-fried to a crisp, golden brown.

The restaurant is good, but the taste of their miso soup and the taste of their teriyaki sauce is different. If you are use to a certain Japanese flavor, it's different. But there tempura is fresh and there chicken katsu is excellent. There sushi is good. Concerning wait time for there food to come from the kitchen is either on time or a long wait time...sometimes a 30 to 45 min wait. The best server there is JC. At first, you might think he is slow and special, but guess what? He is hardworking, observant, friendly and most of the time he will remember you and your orders. Whenever I eat there

Fujiyama is the best quality sushi and dining experience I’ve ever seen. The owners, Tony and Bao strive for excellence in all facets of customer service. They work their tail off to provide the best dining experience for everyone. The sushi is so good! They made me a fan when I typically am not a fish fan. The treasure island roll, and Bao roll are phenomenal! The sushi chefs are really cool and will chat with you to and get to know you. Overall, a really beautiful place with some hardworking staff.

Well, not the best experience for our first time, and not sure we'll be back. The gentleman at the door who adjusted our bill (I'll explain) claimed it was an overly busy night.. Just a little hard to grasp on a nonholiday or special weekend to be so short staffed an provide fairly poor service; The seemingly half filled order of Edamame came after the main Entree(which was cold). The sushi ordered was wrong and took over 15 minutes to back out corrected. The Cali rolls weren't the best I've had, but they were acceptable, same with the shrimp tempura roll I had made up, the girl friend enjoyed

A casual sushi restaurant with surprisingly good sushi for being so far inland! We really enjoyed the sashimi and nigiri so we tried a signature roll and a standard roll, but of which were very good! The Ikura was fresh and the seaweed salad was crisp with slices of cucumber and baby carrots. We will check out the other sushi restaurants in the area and let you know how they all stack up. 4 stars for now.

Prescott’s #1 Outstanding Sushi Bar... Hand’s down.. This modern authentic sushi bar was full of life as I took my wife on a date last night. Definitely recommend anyone that goes in a group of 1-3 that you sit at the sushi bar so that you can get the full experience watching the sushi chefs create the sushi, prepare the fresh fish, prepare the rice, and the friendly, hospitable interaction that they have with each of their guests.
