Dave Pruett grew up in Central Florida aspiring to be a pathologist studying Microbiology and Cell Science at The University of Florida. During the rigorous course load of Organic Chemistry & Molecular Genetics, Dave found serenity reading cookbooks and cooking for friends. After graduating with a Bachelor of Science, he abandoned the idea of 10 more years of school to work in the basement of an 850 seat restaurant.
His sole duty for the first 3 weeks was portioning pasta into 4 oz bags. Strangely enough he loved every minute of it and decided to pursue a career in Culinary Arts. Dave attended Le Cordon Bleu of New England studying classic French technique. While attending Le Cordon Bleu, he interned at Pesce Bleu in Portsmouth, NH, a fine-dining Italian seafood restaurant.

December remains one of our favorite times of the year. Everyone is in a holly-jolly mood, lots of parties going and, of course, the anticipation of a brand-new year on its way. 2019 has been a great year and we're excited to see what 2020 hold for us. Right about now is one of our busiest times of the year, but we couldn't let another day go by without sharing The Freshness!

We used Fresh Tracks for a rehearsal dinner. We ordered the Hanging steak, loaded hashbrown casserole, broccoli and assorted appetizers. We received rave reviews all evening on the food. Fresh Tracks responded quickly to emails, contacts and questions. Service was superb. We would definitely use them again.

The food was delicious and beautifully presented. The staff kept everything fresh and went beyond my expectations by actually bringing the appetizers around and offering them to guests and then again with the cake. Kelly did such a great job of organizing and keeping things going that I didn't even have to worry about a thing and could just enjoy everything. Everything was truly perfect.

We had a work Holiday party at our house yesterday and Dave and his crew did an excellent job. Already in preparation for the event Dave was knowledgeable and professional. At the day of the event they arrived on time and prepared all the food in a professional and calm manner. Diane, our server was gracious and attentive. The whole event ran very… smooth, the food and appetizers were delicious and the portions were very generous. They cleaned everything up after the dinner including glasses, tableware, napkins and so forth. My kitchen looked like nobody had ever been in there. Thanks Dave
