Our founder Charles Negaro is actively involved at Chabaso and as passionate as ever about great bread and big ideas. Now he is turning his focus primarily on healthy bread, especially for school kids.
Years ago, after selling his bookstore chain and starting Atticus Bookstore Cafe, he planted the seeds for Chabaso by gathering together some talented graduate students in the School of Art here at Yale, to try to make bread as wonderful as he'd discovered in Europe.One of those artists still works at Chabaso! Willie Bell - a talented baker and still practicing artist.

For the best eating experience we strongly recommend that you warm your bread in the oven or toaster. This refreshes the crispy nature of the crust and adds a nutty warmth to the crumb (the interior). Simply place the unwrapped bread in a 400° F oven for 3-4 minutes for small loaves or 8-10 minutes for larger loaves (such as ciabattas).
Flour, water, salt, and yeast is where it starts. We use a tiny amount of yeast, preferring to give our breads the time to ferment naturally - at least 20 hours! That creates the best texture and flavor. We think whole foods are better for people and the planet. Our sourcing is rigorous.
While Federal Labelling Laws no longer allow manufacturers to claim "all-natural" on their packaging because these claims can be misleading and industry standards have not been agreed upon, all-natural and certified Non-GMO are still our guardrails.We are constantly experimenting with new ways to make great bread, pushing for more local sourcing, more interesting, more flavorful, more nutrient dense and more sustainable ingredients every day.

Hidden gem of New Haven! The tiny bakery outlet is our new favorite place to pick up delicious breads at half off. They usually have a nice assortment of boules, rolls, and stixs, averaging around $2 each. I'm going to try freezing some and see how they do. Cash only!
I was told it was okay to park in the bakery lot, so don't worry about street parking. It would be great to have a list price for each type of bread so customers don't have to ask for each item.

Got there late in the day and they only had 3 packets of the same bread available but you take your chances in this situation so that isn't the reason for 3 stars. Reason I give it a 3 is because the cashier wasn't that friendly and there was no signage so I had to ask a lot of questions.
I asked - Parking is allowed in the parking lot that has the fence around it when you are going to the bakery so don't bother trying to find street parking.
Regarding the bread- got a simple olive oil loaf and used it to make little pizzas and thought it was great but if you live in CT you

This review is for the Classic Ciabatta. Got it for half price from $3.99 at the supermarket. It was the most bland bread I've ever had. Absolutely no flavor. They could at least put some more salt in it as I couldn't tell it had any to begin with. The texture and chew was fine, otherwise I would have only given one star.

After completing the Christopher Martin 5k in New Haven, I was lucky enough to have stumbled upon the booth your bakery had set up. Fresh ciabatta sticks were being grabbed by everyone. I was fortunate enough to be one of the people who walked away with the most wonderful ciabatta I've ever eaten.
I will absolutely visit your bakery, which until today I didn't know existed. If the rest of your baked goods are as good as your bread, I will be a regular customer!!!

These guys are a joke. Bought their Wheat & Olive Oil bread at a Stop N Shop in Rhode Island. The following are some observations:
- Its supposed to be a wheat bread, but wheat flour is literally the last item in the ingredients list. There is more Olive Oil than wheat flour!
- The bread is marketed as 'All Natural', however the flour they use has been enriched. Im sorry, but those chemicals used to enrich bread dont sound very natural to me!
- They tout 'Good Source of Protein' on the packaging. The bread only has 5 grams per serving! Thats not even enough for them to have

In my opinion, this is the best bread in the state. Any time I have gotten one of their loaves of ciabatta, their boule or various kinds of whole grain, it has been absolutely delicious. Best of all, it freezes very well. All you have to do is pop it into a warm oven and it tastes like it has just been baked.
You can get their bread at local supermarkets; however, if you make a pilgrimage to the bakery outlet on James Street, you can get the freshly made bread at a discount. They also have day-old loaves for a dollar.
