All handmade and hand decorated using all natural ingredients with a European approach to flavor and sugar balance. Our many cheese cake varieties are all based on a 1920's recipe. These creamy cakes are all baked in indirect fired Middleby ovens, using the same processes as way back when. All of our pies are made by hand and presented in buttery crusts that are baked to a golden hue.
Our low profile gourmet tarts are made in the French tradition, with delicious filling over a pastry base. These are perfect for easy handling, portion control and lend themselves well to plating and decorating. Services
Back in 1983 in Old Greenwich Connecticut, Hudson Valley Baking started as a small bakery with big ideas. Being taught by European pastry chefs from the likes of France, Germany, Hungary and Finland, the owner felt that our food supply chain had been 'prostituted' throughout the years and strived for an earlier time when quality ingredients was a must for anyone that truly had pride and passion for baking and food in general.
An All-American carrot cake with fresh eggs, raisins, diced walnuts and naturally sweet California carrots. This moist tasty cake is finished with sweet butter and cream cheese blended to a smooth frosting. 100% Italian mascarpone cheese mixed with espresso and amaretto liqueur between two thin yellow sponge layers.
A melt in your mouth New York classic! 100% pure locally - sourced cream cheese, sour cream and fresh eggs are artfully blended together and twice baked. Our famous smooth NY cheesecake topped with silky chocolate mousse and finished with crunch sniker pieces and drizzled chocolate. Our creamy New York Style cheesecake covered with chocolate mousse and enrobed with melted semi-sweet dark chocolate.
A rich blend of brown sugar, syrup, eggs and all-natural real butter and of course sweet Georgia pecans all in a flaky, buttery crust is perfectly baked to a golden hue, giving this custard pie its traditional southern flavor. A delicious blend of fresh blueberries, cranberries, raspberries and Strawberries are baked in our deep dish crust then finished with a crumbed streusel topping.
A Hazelnut flour crust is filled with our own homemade raspberry preserves, topped off with a lattice crust and an apricot glaze. An Italian cornmeal and hydrox crumb crust is filled with a thick chocolate ganache, covered with dark chocolate with a milk and white chocolate decoration. Our tart shell with a delicate layer of frangipane, sliced apples and topped with pear halves and lightly glazed.

Let me start off by saying I generally do not like chocolate cakes... at all. My wife and daughter on the other hand love them. How did we come to know about Hudson Valley Baking? We bought a car!! LOL. Seriously. When we were done, we were asked what kind of cake we like! The dealership had 4 or 5 selections. I was all for the carrot cake or cheesecake, but my daughter heard chocolate mousse and that is what she wanted. I capitulated.
