I had really high hopes to try this place but unfortunately I didnt get that 5 star experience other reviewers had. Saw this place at Maui Sunday Market and I was so excited to give it a try because its way different than what everyone else sells there. I walked up to the tent and a young man was working wearing a corn hat. He looked at me and just waited for me to order, no greeting, smile, or at least some time of great customer service whatsoever. I brushed it off, maybe it was a long night? I chose the mexican corn bowl. I was expecting the corn to have been cut off the cob, but it was actually just canned corn. The taste of canned corn is not nearly as good as corn on the cob. I was given a colder than room temperature bowl of canned corn which was watery. It had a decent amount of toppings but it did not taste good. I ate as much as I could stomach (since I had paid $10 for it) and threw the rest away. It could be executed so so much better. The people running the stand were very nice. I would not eat this again.

So amazing! Our family LOVES this gourmet corn. Stoked they have corn bowls now too. All the butter and sauces conglomerate in the bowl and it turns into this like, corn stew from heaven thing. Highly recommend the Mexican and Italian. Actually, they're all amazing in their own way.

Saw one of their ads on social media and knew I had to try. My daughter and I decided to share the elotes bowl. We got our order, then walked a little ways to sit and enjoy. She took the first bite and decided she didn't want to share with me after all. 🤣 I had to walk back and get my own order. Delicious! So glad we have elotes in town. After reading other reviews, sounds like I'm going to have to try all of their flavors. I interacted with Chris and the person who took our order; all SUPER SWEET human beings! Went to first Friday for the first time, in Wailuku this past Friday. Discovered The Corn Project and had to sample. The gentleman working the booth suggested the Italian, so I tried it. It's unusual in a wonderful way. I'm a big corn fan especially on the cob. It was delicious!! I can't wait to try other kinds. I recommend this to corn lovers and anyone who wants to try something wonderfully different. Mahalo!!

Saw this truck at a Paul Simon concert at the MACC and it looked super good, plus my husband love traditional elotes. My husband and I went to the last third Friday special to try these elote-like treats.
They are not as good as real Mexican elotes, but that's because they are not made the same. They are kind of their own take on the Mexican street food though. If you're coming here expecting to that you're going to be disappointed, but it still good.

I discovered these guys at the April 2019 Sacred Hearts School bazaar in Lahaina where they had a food stand.
MENU:
Simply corn on the cob in four flavors: Local (garlic butter, salt, paprika, pepper), Mexican (lime, cheese, chili powder, cilantro), American (mayo, cheese, navy, chives), and Italian (pesto mayo, sundried tomatoes, basil, cheese).
FOOD:
Local - $6.00
Even though I went the most traditional route of the four, it was seasoned with spices that I love. Everything tastes better with butter! Add on black pepper, Hawaiian salt, and paprika, and I was in maize heaven as the cob was

I am an Oahu resident but was on Maui for the Paul Simon concert. We had the pleasure of finding The Corn Project in the courtyard where they were selling food from food trucks. I had been craving Mexican corn and they had it. I was NOT disappointed. Yes, I had to wait for a while, but that's just because they were so popular and it takes time to make delicious corn. The girl taking orders was super sweet and made sure to give us a business card so we could find them on social media. They also have a stamp card which is great for those who live on Maui. I'd love to try all their flavors

My better half LOVES corn on the cob, especially corn that has deliciousness allllllll over it. We went to First Friday in wailuku this evening and as soon as I saw their inviting sign with the pictures of their corn on the cob, I KNEW he was gonna want to get food from there.
