The Kimpton Cottonwood Hotel is a modern reimagining of the Blackstone Hotel, first built in 1916. Beautifully laid out and the pork belly appetizer and steaks were cooked to perfection. The price was understandably high but my biggest complaint is the noise level. When you anticipate spending a few hundred on dinner for two you expect to be able to maintain a conversation at a reasonable level. We requested dessert to go because the noise level was so disrespectful.

This place is definitely very beautiful and the aesthetics are there. The Service was Impeccable. Our Server Ashlyn was really amazing and very knowledgeable about the menu. However the food itself was a bit of a let down. We ordered a Strip Steak and while the cook was good we felt like the rub on the steak or the surface the the steak was cooked on caused a very convictional and not pleasant taste. The Mash Potato's where good and nostalgic however that nostalgia comes from my mums boxed flaked mash potatoes mix growing up, it had a grainy and dry texture to it which in its nostalgia is

My husband and I visited Committee for my birthday. Normally we would not spend over $100 on a menu item, but we decided if we're going to try this, let's order whatever the waiter recommends no matter the price. He recommended the porterhouse ($135) with some sort of seafood topper on the filet mignon side ($20?). We also ordered au gratin potatoes and asparagus. The atmosphere and service was amazing. I guess my first disclaimer to this review should be that steakhouses are not really my favorite type of restaurant, but I have been looking forward to trying this one because of the rave reviews. (I do just love tasty food after all).

Why? I'll tell you.
Upon walking in at 5:30, easily finding seats at the bar... it took minutes to be recognized. There were 3 bartenders. My request for water with my drink order was forgotten. 1 of the bartenders saw me say this to my companion. They did nothing about it.
Fast forward to food. The burrata app was ok. Cheese and bread were tasty. The prosciutto was a mix between bacon and prosciutto.
The strip steak was way over salted but cooked very well. We were served on saucer plates though

The service was fantastic, the classic steakhouse vibe was on point and the food was superb.
We started with one of the cheaper bottles of red wine, Sean Minor - Cabernet Sauvignon, which paired well with the big bold flavors of our meal.
For appetizers we chose the Burrata and the twice cooked pork belly. Both were perfectly prepared, full of flavor and beautiful on the plate. I think my wife said it best after her first bite of the pork belly "I could stand on the table right now!" This is a behavior I had never heard her voice interest

Oh my gosh. I actually had to wave the waiter away when he asked how the food was because I was too immersed in the amaaaaaazing flavors to be bothered to form a coherent answer. My husband got the bone in ribeye, the very best steak either of us have ever tried, and possibly even more impressive was the scallops which were also the absolute freshest, tender and perfectly cooked seafood I believe I've ever experienced in the Midwest. I realize this might sound exaggerated with all the "ever"s and such but it's not! And yes it is pricey, but it is worth it. Just impeccable. One

We tried the Committee Chophouse for the first time last night and found it to be a delectable take on steakhouse classics with a strong focus on quality ingredients. We started off with the large chilled shellfish, consisting of 2 buttery king crab legs, 6 jumbo shrimp cocktail, 6 of the briniest freshest oysters, and a fresh and meaty lobster salad. We were nearly full on that alone, but then the halibut arrived...! It was seared to perfection and topped with perfectly balanced hollandaise, more king crab, and asparagus! Delicious!! I had an outstanding dinner last night at the Committee chophouse and wanted to share my experience. First of all the atmosphere and decor were very well done, if they were going for a vintage 1950s steakhouse vibe, then they totally succeeded, right down to the plates and wallpaper. The wine list was also excellent, as were the cocktails, I should add.
For dinner my companion and I started with the beef carpaccio, which was excellent, it didn't last long. We then ordered salads, and I would highly recommend the caesar, very nice portion with creamy avocado infused dressing. For main

What a top notch experience. Lets start with the beauty of the restaurant. Located inside the newly remodeled Cottonwood Hotel, the architect of the redesign did an amazing job of maintaining many of the 100 year-old original elements such as flooring, marble and ornate ceilings. I will go out of my way to support individuals who refurbish older buildings in Omaha. If dining only, be sure to spend some extra time wondering throughout the hotel.

The food is FANTASTIC!
We shared the duck confite, wild mushrooms, Lyonnaise potato's and the Cowboy cut ribeye. Steve took the house salad that came with the meal and I ordered the butter lettuce salad.
OMG! The food was perfectly prepared and met every expectation. Even sharing there was so much food we couldn't finish the sides.
We seldom order dessert but since we can't manage to get a cruise to Alaska (3 cancelled so far!) w ordered the flamed Baked Alaska. It was delicious and fun!
Expensive? Yes.
Worth it? Every penny!

The newly renovated Cottonwood Hotel is absolutely beautiful! We went for an evening of dinner and drinks and were so impressed by the aesthetics of this hotel and the restaurants. The restaurant was pretty busy and for social distancing purposes we chose to sit at the bar for dinner. The service was okay, pretty slow and we had to ask for water and cocktails many times before getting refills but we tried to be understanding as there were only two bartenders there on a busy Friday night.

Holy cow. This place is gorgeous in every way from the interior, to the food, and the drinks. You must try one of their Negronis (seriously the best I've had in Omaha) and start with the pork belly app. So good. Not to mention our attentive waiter, Peter, who was very knowledgeable and friendly. Our dishes came out fast and hot. Sadly some of the dishes we were thinking about getting were all sold out! But there was still much to choose from.

We started with the walnut shrimp. We had the filet mignon for the entree, mashed potatoes, and creamed corn. We finished the meal with the white chocolate coconut bar and Montblanc.
The food was delicious, the filet melted in our mouths. The sides were amazing. The desserts topped off a wonderful meal.

The service included all the traditional pomp and circumstance you would expect at a traditional steakhouse . I had the bird bath martini, which was a standard gin martini, the cornbread, gratin, and lobster pasta, of which should be avoided. Do yourself a favor and just get the steak, with a side of gratin.
