The brainchild of Chef Jose Andres and his talented team, China Chilcano celebrates the rich culinary diversity of Peru and brings an exciting exploration of this multicultural cuisine to our Nation's Capital. The restaurant honors Peru's deeply rooted and diverse heritage, including its native Criollo, Chinese Chifa and Japanese Nikkei cuisines; its name an homage to Peru's renowned fish stew and its popular national drink, the Chilcano.

China Chilcano ranks consistently as a top DC dining destination, and has been awarded a bib gourmand in the 2017-2020 Michelin guides to Washington, DC. At China Chilcano, Criollo exists in every single dish on the menu, whether it's joined by Nikkei, with nigiri served on a bed of causa, a signature dish of pureed Peruvian potato, or Chifa, through a chaufa dish made with fried bananas.

Came in for dinner with a group of 4 which was perfect for this menu only tapas. We ordered many things and shared which is certainly the way to go. My favorite dish was definitely the dim sum with the quail egg on top (dorado). Wow! I would come back just for that dish. Surprisingly, I also enjoyed the causa limena. It's like mashed potatoes with just the right amount of citrus added over top of chicken salad with pieces of avocado. Not something I would have ordered but glad someone else in my party did. Definitely get a ceviche. The clasico was nice. We ordered all three desserts on the menu

I was looking for a nice romantic date night and China Chilcano fit the spot just right.
I first called them to check if they had seating/reservations for later the same day and they were super helpful and I booked a time no problem.
The restaurant is in the heart of DC so parking may be difficult but the food and service is worth it.
The restaurant fuses peruvian dishes with Asian mixes which was so delicious.
We tried the classic ceviche and a few other dishes that I unfortunately forgot what are called at this point, but I don’t think you can really go wrong with anything here.

I received an email from General Manager Alan Grublauskas about our experience at China Chilcano. We went last night for NYE. It was disappointing. We usually love Jose Andreas's restaurants, but this one was… lacking in ambiance, comfort, service, and cleanliness. To begin, we were seated at THE most uncomfortable table in any DC restaurant I’ve ever visited (despite making the reservation weeks in advance). Sitting on narrow metal chairs made it feel like a high school cafeteria. The table was also tiny and smushed against another couple (during a pandemic?!). The decorative wall

The atmosphere is great, everything we ordered was extremely delicious - both the food and the drinks were great.
The stuff were friendly and the decoration of this place is stunning!
The flavors combination is unique, it is a must visit restaurant!

The pisco sour is just as I remember having it in Moquegua, Peru. The ceviche was so acidic and just as I hoped. The décor is beautiful and modern. The service was great as well. I will be coming back to China Chilcano the next time I visit DC.

Drinks, food and dessert were spectacular
Kids even tried some food way outside their comfort zone and were pleased.
Service and ambiance were way above par also.
Lettuce wraps and drinks were highlights for me

I wanted to like this place but the flavor combinations were really not my thing. The atmosphere was cool. The food looked nice but It’s not a José Andrés favorite.

It’s not an authentic Peruvian restaurant, but more like a Peruvian cuisine-inspired restaurant. The ceviche feels a bit like the poke style. The yuca fries was very delicious, just like the yuca version of takoyaki (Japanese octopus balls). The fried rice was also pretty good although slightly pricy. The dessert Suspiro Limeña was our favorite, sweet and refreshing at the same time. We also enjoyed the vibe here!

Great service, cocktails, and overall menu. A pisco sour and the yucca fries are a must when stopping by here. Tuna donburi and the very creative ponderaciones de kiwicha will make you leave with a happy belly.

I must say, our server was amazing! This place has an artsy vibe with energizing decor. The menu is simple and the descriptions are spot on. Every dish we had was bursting with flavor. I HIGHLY recommend the Sánguche de Pescado! And a big thank you to the manager who took great care of us.

Great place to eat in DC. There is lots of unique dishes that were very good. I particularly enjoyed the Lam Lam and the Pollo Dim Sum. A good thing to remember is the portions are somewhat small so remember to order 2 or so per person. Also, 2 of our dishes were lukewarm. While they were good, it would've been better to have been hot. Overall it's a great place to go to and I'd recommend it.

Excellent service and excellent food. I had the Camarón Saltada Maestro Wong. Incredible flavors. The floor layout made for an attractive and cozy feel. We can’t wait to go back.
