Mathieu Choux arrived in Boise from Burgundy, France in 2001. By popular demand from local restaurants, the Cafe expanded its wholesale baking options in 2006 to serve the local market. Mathieu closed the Cafe's doors years later to focus solely on Gaston's Bakery and serving much more of the Treasure Valley.

The bakery is now located on the Bench and has developed into a national brand via countless community partners, food distributors, and Sur La Table. Contributing to local communities has always been a top priority for Mathieu and generates most of his daily operation. In the past few years, he decided to take the bakery to the next level and start working on the core of his field: flour.
Services
We handcraft artisan loaves daily, specializing in sourdoughs, sandwich breads, baguettes, rolls & buns. We use a UNIFINE mill to produce our whole, high-extraction flour. We leave the nutrients in, and leave the bleach out! The mill is the latest addition in our quest to offer the highest quality and cleanest baked goods possible.
We work around the clock to offer daily deliveries of fresh baked goods to restaurants, coffee shops, breweries, supermarkets, hotels. Gaston's Bakery is here to help you create great guest experiences through locally and ethically sourced products. We work with several regional food distributors: US Foods carries the largest selection of our items, but we also distribute through Shamrock, Nicholas & Company, and Sysco.

My favorite local bakery in Boise. They also usually have a stall at the farmer's market. Love the ham and swiss croissant (or any of the stuffed croissants). Cannot recommend more highly. If you don't have time to stop by, they also stock a number of coffee shops in the valley.

Oh how I wish Gaston's was a national chain with locations in every major city in the country! I'm not sure if everyone in Boise appreciates how lucky they are. Some do--I showed up before opening on a Sunday morning and there was already a short line ready to grab Gaston's goodness. Everything here is delicious and reasonably priced. Truly a gem in the Boise food scene!

Best breads ever....the staff so nice and very helpful.....we had the olive loaf, banana bread, and ham and swiss croissant.....the best croissant I have ever eaten.....thank you gastons

Nice place for taking out different types of bread, croissants, scones... there is no seating area inside just a bench outside ! Very friendly staff! I had an olive loaf and an almond croissant that were delicious! It is recommended!!!

Pretty solid pastry selection, definitely a quick go-to for me if I want to take treats into the office for people. The croissants are IMO better than any others made in Boise. I tend to go for the more traditional French pastries, but the Danish are fantastic and I am told the cinnamon rolls and bear claws are both amazing.
I don't stop in as much as I should as I feel they keep a little weird hours for a bakery (don't open until 9am).
I really miss Le Cafe de Paris. Their duck egg omelets or the Croque Madame, I can still taste. I think I will stop on the way to work on Friday.

We stopped for two days in Boise and we’re disappointed to find out that Janju was closed Mondays and Tuesdays.
We checked out Gaston’s and we’re very disappointed.
The almond croissant dough was dry, they skimp on butter, and there was very little almond filling. We will not go back.

I like trying new pastry shops so this one was my next place to try, unfortunately it fell very short of my expectations. The case was practically empty and I ended up with only 2 pastrys and I didn't enjoy either. The Nutella one had hardly any Nutella and mostly tasted like bread, the peach Danish was gross and the peaches themselves had a horrible canned/ metallic taste.

Best bread in Boise. I don't think I'll buy bread from any other bakery. My favorite so far is the sourdough loaf.

Receiving a stimulus economic relief payment? You would not be disappointed if you used it all to buy an abundant amount of bread here.

I had never had a kouign amann pastry before trying one here, and I have been on the hunt for one as exceptionally amazing since! If ever I'm in this part of the country again, I will be ordering all the kouign amanns! (Pronounced queen ah-mawn)

We went a little late, and all we got was burned pastry. At $3 each and was so burned it was inedible, we probably will not return.

How can I ever enjoy store bought bread after eating Gaston's. Purchased 5 loaves of bread in June and froze them. Found out on first loaf that I needed to use an extra plastic wrapper, but after that enjoyed the bread so much. Makes the perfect toast. Heading back to Boise this weekend. Trying to figure out how many will fit in the freezer. Nothing compares.

Gaston's Bakery is the best bakery in the US! We live in San Diego but are in Boise a lot. We always make a point of stopping by to get a loaf or two of their sourdough, rustic ciabatta or country breads! And if you love croissants... you will definitely love theirs! Eating them makes you feel like you're in France at a fantastic pattiserie! I am gluten free but I've noticed in Europe I don't seem to have any issues. Gaston's gets their wheat from France and then they mill it themselves. And I can eat everything they make! Very exciting! I missed sandwiches! If you stop

It is no secret that I absolutely love bread. All kinds of bread make my heart sing. But croissants are the true apple of my eye, my main squeeze, a secret paramour, and obsession. I could wax poetically about Gaston's croissants for this whole dang review.

Gaston's puts out several types of croissants. The plain one is soft, and layered and so. damn. buttery. The layers will puff up when you bite into it and you could easily eat 2-3 in one sitting.

They have swiss and ham (this can easily replace your breakfast, so put down the Captain Crunch and pick up a Gaston's!). If you

The pastries here are YUMMY! We have been here a few times now and love the Brioche for making the BEST french toast. The sourdough was the best I've had yet and the other loaves were good too.

It is quite small and I thought they would have a lot more on the shelves, but if you are looking for fresh baked breads and pastries, this is the place.

Small bakery with a lot of emphasis on pastries. One of the reviewers here said it's comparable to German bread. Having grown up it Europe this is not anywhere close to what you get in Europe. Having said that, I think for most Americans this bread is above average. I got the multigrain loaf which was a bit dense with not much taste. Ciabatta bread was average (I prefer Acme's). My son liked the croissants. The shop looks nice, I'd expect more selection (again comparing to European bakeries). Service was good.

Picked up a loaf of your sourdough bread yesterday at the outdoor Meridian Saturday market. We can't stop eating it. It reminds me of driving to San Francisco and getting sourdough at the Fisherman's Wharf! The crust is awesome. Is it possible for it to be crunchy and chewy at the same time?! I loved cutting into it and seeing all the holes. I threw a couple slices of a nutty Swiss on it. We toasted some in the oven with Jack cheese on it. We ate some with butter and it is just as tasty as is. So happy to see you sell at the Co-op as we are out in Eagle. I'm anxious to try your multigrain

I have never had a pastry that rivals Gaston's. I drive across Meridian to the Co-Op on the weekends just to go get a ham and cheese croissant. The buttery, flaky, delicious taste is something I look forward to starting Friday as I finish up work all the way to Sunday Morning as I get up and on my way to get one. What a gift these people have, to bake things as beautiful and scrumptious.

What a great new bread Gaston is now putting out, The Idaho Wheat Bread. Sold by the ounce ($2.89 per lb/16oz), it makes the best crust and texture we have tasted.

We got ours at the Meridian Coop and it came in 2 loaf sizes. For two people, the smaller loaf, about $2.50-$3.00 a loaf-by weight), it was hard not to just make it the meal and eat it all at one sitting with butter and jam.

Get some and try it. You'll love it.

Continuing the tradition of excellence established by owner Mathieu Choux to craft artisan breads and pastries, since about November'ish' of 2018 Gaston's has been milling flour from Idaho grown wheat and making Idaho Wheat bread. The loaves are crafted with 30% starter in slow, 24 hour rise and the flavor and texture are splendid.

My husband and I are avid home cooks and supporters of local artisan food purveyors and have enjoyed several Idaho Wheat loaves. The bread is delicious sliced to enjoy on its' own or as ingredient for other dishes; made into fresh crumbs to bake

I wish they cover the bread a little better at the store. Maybe have the bread inside a display or have sneeze guards to protect the bread from being out in the open.

This is a small bakery. Right beside Idaho youth ranch thrift store. So make your visit count twice in your community
I have bought several items here in my past few visits and never have i been disappointed.
The bread loafs are huge fresh and DELICIOUS.
The croissants are lethally decadent. Buy 2 and share with someone you love!
Go early and grab something to go with a special dinner.

Gaston's bacon cheese sticks are just like crack: highly addictive. They appear to be made with croissant, so they're incredibly flaky and flecked with ample pieces of bacon and filled with cheese.

They're really great. And 50 cents less at the bakery than the $3.50 charged at the Saturday markets.

And while their version of Kouign-Amann, the Breton cake filled with butter, isn't quite as good as the ones offered by Janjou Pâtisserie on State Street, they're still pretty darn good. And their breads are excellent.
