When the founder of Fressen Bakery was in the States for about a year (from Germany), he realized over a morning scone and cup of coffee how much he missed the breads, pretzels, and pastries of his homeland. Taking matters into his own hands, he leaned on his training in the German baking guild and raided his mom's cookbooks.

After years selling at farmer's markets and to local restaurants and stores, the first Fressen cafe was opened in 2012. Fressen Artisan Bakery uses minimal technology in all of our breads and pastries, preferring to make everything by hand. You'll taste the difference! I've been visiting their booth at the Portland Farmer's Market, and have been delighted with every single purchase I've made.

Fressen Artisan Bakery offers high quality artisan breads, pretzels, and pastries in the German tradition. Incorporating organic, local, and sustainable ingredients, the bakery uses minimal technology when making product. Everything is done by hand. Edgar Loesch, the founder of Fressen, started his baking experience in the guild system in Bavaria Germany.
Edgar was raised in Romania by a family of Germans, spending much of his youth on his grandparents farm. He was taught traditional ways of preparing and preserving food, without realizing they were dying arts. Today he is a master of his craft, recreating the recipes of his youth for the modern palate.
I've been visiting their booth at the Portland Farmer's Market, and have been delighted with every single purchase I've made. The potato bread is soft & flavorful, the danish is wonderful and flaky (best I've had in town so far!)! Each dessert is a classic. The owners are kind, engaging, and highly knowledgable about their products.
