Our newly crafted Free Form Collection invokes the spirit of the neighborhood baker. By combining our innovative processes with premium ingredients in a controlled-temperature setting, each loaf is free to rise and evolve naturally- delivering a tawny crust and tender crumb that is free from ordinary.

Our menu of small-batch style bread is extensive. From authentic artisan baguettes and classic ciabatta rolls to sweeter recipes featuring chocolate and cranberries, every loaf we create inspires. Education is paramount to our work. We continue to hone our craft through the guidance of master French bakers and other industry leaders.

The heart and soul of our bread, our levain-a live, liquid starter-has been thoughtfully maintained every day for over 35 years.
Quite simply, it means using premium ingredients and a signature levain blended together in a time honored, long-fermentation process. Because of this method-and our team of talented bakers-our artisan bread has a crisp crust and superior honeycomb cell structure. Our process utilizes an all-natural levain (a flour and water mixture also known as a starter).
