We start with the essentials of organic flour, water, sea salt, and naturally occurring yeast. They form the basis for all our bread.

We use time-honored techniques; organic ingredients, naturally fermented starters, hand-forming, and partially hearth-baking our loaves. The Essential Baking Company was founded in 1994 by George DePasquale and the late Jeff Fairhall. Jeff founded Essential Foods, a startup company that made and sold wrap sandwiches. George came to Seattle from San Francisco to pursue his passions of baking and playing bass guitar. Luckily, George and Jeff's paths crossed and they started a business selling George's signature breads at the Fremont Farmers Market.

Bake bread for 12 to15 minutes for loaves, 6-8 minutes for demi baguettes - or until the crust is as you desire, and the center is soft and hot to the touch. Separate the halves and smooth the garlic parmesan spread evenly on both sides - it may stick to one side at first. Remove bread from package and discard oxygen absorber.

I see a lot of low star reviews based on options they may or may not have had. I don't have any food sensitivities, and am just interested in good food. I'll tell ya, they have amazing food. I've had their pizza and also had a turkey pesto sandwich. Both of which blew my expectations out of the water. I have been very impressed, and hope that the 3 star ratings on tis site don't scare people away. This is a weekly spot of mine now, and I HIGHLY RECOMMEND this place to anyone who likes the kind of stuff they have on the menu. This is the best pizza I've had, I loved the

It is a bakery. It is a sandwich shop with limited quality options. The bread and sandwiches are really yummy good but not on a very affordable side on 1st Ave in Sodo industrial area. A whole sandwich exceed $11. They have outdoor seating but facing the busy 1st Ave with dust and traffic view. The indoor seating is very limited as well. The air circulation is not the best.

Well, it is okay for Togo and a quick bite in here if I happen to be in the area (which is rare).

Alki Bakery is across the street with a full restaurant set up.

While the food was decent, I advise you to save your money. I got a meager half sandwich for $6.50 including tax, and it took 10+ minutes just for them just to toast it.

Stopped here for breakfast before a meeting. Was really just looking for a cup of coffee, but saw omelets on the menu and thought it sounded good.

Service was friendly but a little slow. The place is small, but they weren't too busy at the time. The omelet was good but nothing special. I doubt I'll go back.

Did the definition of 'kosher' (clean) suddenly change? The people behind the counter said when I was at the counter that Essential Baking Company on 1st S is kosher. I asked about the bacon-laden Cobb salad on the menu, and the meat-and-cheese sandwiches:
"Are those kosher?"
"Mumble-mumble-mumble" in response. If a location is kosher, there is NO co-mingling of meat and dairy with anything else, and as for anything even remotely porcine in origin? Fuggedabouddit.

This location is not kosher.

If I'm wrong, please correct me.

Obviously this place as a mother ship, I get their breads all the time (grocery), Especially the multi grain seed type ones! It is cool to know that for suto catering i could get to this place early in the morning, get the breads fresh from the factory! Then into lunch suto party event co workers conceptual etc... When some of my family comes to visit they always want to go to Essential bakery locations! I am super curious about the air seal ones. I haven't tried it yet!

This is my favorite place to grab a drink. The baristas are always so sweet and take really great care of me, and it is consistently the best coffee I have ever had. Highly recommend for a pleasant cafe experience!

Nothing's changed. This may actually be the best Essential outpost, and loaves of their great bread are discounted with your lunch order.

Very knowledgeable about allergies. I was able to eat the crepes and had their huge chef salad with their balsamic dressing.

This review targets the service experience and the goods bought at grocery stores that carry their products more than this particular site, but their WWW points at this address as the home office so here goes.

My favorite EBC product used to be the artisan crackers baked with sea salt, cracked black pepper or rosemary. A few months ago, they disappeared from shelves throughout Seattle. We stopped at their bakery in Madison and the agent at the counter had no knowledge of the crackers or their whereabouts. So I wrote to their home office and didn't hear back for several weeks. After

The lunch sandwiches are pretty tasty for something that is not made on the premises. They are, however, very small for the price, quality ingredients not withstanding. I value that some ingredients are locally produced (and think that the non-GMO movement is anti-science), but a small sandwich is a small sandwich.

My biggest problem with them is availability; because they don't actually make the sandwiches or salads there, they tend to run out of things earlier in the day and have no ability to make more. Their breakfast sandwiches are a bit cheaper and are actually made there, but even

The sandwich I had was fine. But it was just fine. A $5 charge for a half sandwich that had more lettuce than meat and came with absolutely nothing else... Well, it's ridiculous. I bought a half loaf of their Rosemary Bread and it cost half that much. I just can't believe I walked out with a 4-inch square sandwich and that was it.

If the sandwich was better I might be more impressed but I've had a gas station sandwich that rivaled it.

The people that work here are extremely nice. The food is always fresh and tasty. My only issue is that I would like some chips or a simple side with my sandwich, is even a pickle too much to ask for? Who just eats a sandwich only for lunch? Can I have an apple, banana, cup o'fruit? Geez... just give me something other than this almost $10 tasty sandwich.

But thanks for being overly friendly while serving me my lonely sandy.

I stopped in once to pick up some bread on the way home. It was toward the end of the day so there wasn't a lot of offerings. The nicest looking loaf was a lone Rosemary Diamante so I grabbed that and some coconut macaroons.

Back home, I sliced into the rosemary loaf and served it with dinner. I noticed my friends were scraping the salt crystals from the top. It was TOO damned salty : (

I gave them a third star for those macaroons. They were the dessert that night and everyone loved them. Other than that, there's better versions of this bread at other local bakeries.

This place caught my eye one day and later stopped in for lunch. I had much higher hopes for this place than I actually discovered. The sandwich I ordered was not bad but other than a pickle there were no sides that you could even order. The bakery counter and seating left a lot to be desired as well as the menu.
I had the ruben snadwich and it was okay, but I ended up still leaving hungry and the price was a little high for that.
